Calasparra Rice

A true paella must always be cooked with authentic Spanish paella rice, of which there are only a few varieties.  We exclusively use Calasparra, grown in the Murcia region where the mountain water is fresh and cold, resulting in a short, hard grain that absorbs stock well yet remains intact.

Home cooks often substitute Calasparra for a good quality Arborio but we believe that,

'The key to success with paella is in the absolute quality of the ingredients.'
